CHEF MENTORING/MENU TASTINGS
Every chef deserves to be trained and developed. Regent will assess your cooking dish by dish and provide technical and scientific feedback relating to quality and flavour.
Creating a menu of balanced appeal at the right price for your market is difficult enough. The real test however is ensuring that your menu is cooked and executed correctly so that flavours are fresh, vibrant and accurate, and your customers keep coming back. In conjunction with the Taste Academy and the Chef Factor, Menu Tastings provide an important insight into the skills of your chefs.
Typically, the menu tasting takes 6 hours with 3 hours allocated to sampling every dish on your menu. During the exercise we will take professional digital photos of each dish and at the end of the tasting we will record @1hr of digitally recorded feedback. In addition, we will explore your suppliers, kitchen operation, and provide a market overview on how well your cooking is matched to your market.
